fix: run bootstrap pnpm via node instead of bin shim

Use `node .../pnpm/bin/pnpm.cjs` to run the bootstrap pnpm, matching
the approach used by the old bundled pnpm.cjs. This avoids issues with
the .bin symlink on different platforms.
